The best Rhubarb Shrub
Ingredients
- 2 cups cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 cup cup apple cider vinegar
- 1 cup water
Instructions
- Rinse the rhubarb thoroughly and chop it into small pieces.
- Combine with Sugar: In a medium bowl, combine the chopped rhubarb and sugar.
- Stir to coat the rhubarb evenly with the sugar. Cover the bowl and let it sit in the refrigerator for at least 24 hours. This will allow the rhubarb to macerate and release its juices.
- Strain the Mixture: After 24 hours, strain the mixture through a fine-mesh sieve or cheesecloth into a clean bowl, pressing down on the solids to extract as much liquid as possible.
- Add Vinegar and Water: In a clean jar or bottle, combine the rhubarb syrup with the apple cider vinegar and water. Stir or shake well to mix.
- Store and Serve: Store the shrub in the refrigerator. It will keep for up to a month. To serve, mix a few tablespoons of the shrub with sparkling water or club soda for a refreshing drink. You can also use it in cocktails or as a mixer.
