Ingredients
  

  • 4 ripe peaches halved and pitted
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/4 cup chopped walnuts
  • 1/4 cup pumpkin seeds
  • 60 grams goat cheese crumbled
  • Fresh mint leaves for garnish optional
  • A pinch of salt

Instructions
 

  • Preheat your grill to medium-high heat.
  • Prepare the Peaches:
  • In a small bowl, mix the honey and olive oil. Brush the peach halves with the honey-olive oil mixture.
  • Grill the Peaches:
  • Place the peaches on the grill, cut side down. Grill for about 3-4 minutes, until grill marks appear and the peaches are slightly softened. Flip and grill for another 2-3 minutes on the other side.
  • Toast the Nuts and Seeds:
  • While the peaches are grilling, toast the walnuts and pumpkin seeds in a small dry skillet over medium heat for about 2-3 minutes, stirring frequently, until golden and fragrant. Be careful not to burn them.
  • Assemble:
  • Remove the peaches from the grill and place them on a serving platter. Sprinkle the toasted walnuts and pumpkin seeds over the peaches. Crumble the goat cheese on top.
  • Garnish:
  • Add a pinch of salt and garnish with fresh mint leaves if desired.
  • Serve:
  • Serve the grilled peaches warm or at room temperature.
