  • 1 tsp sugar optional, depending on tomato sweetness
  • Salt and black pepper to taste

Instructions
 

  • Roast the Tomatoes: Cut tomatoes in half, drizzle with olive oil, season with salt and pepper, and roast in the oven at 180°C for 30 minutes. This enhances their natural sweetness.
  • Sauté the Aromatics: In a large pot, heat olive oil and sauté onion, garlic, and carrot until softened.
  • Blend It All Together: Add the roasted tomatoes and vegetable broth. Simmer for 10 minutes, then blend until smooth.
  • Season to Perfection: Stir in basil, adjust salt and pepper, and add a splash of cream if desired.
