Ingredients
  

  • 600 g waxy potatoes boiled the day before, skin on
  • 2 tbsp butter plus extra for frying
  • 1 small shallot finely chopped (optional)
  • 1 tbsp chopped fresh herbs parsley, chives, thyme – go wild!
  • Salt & pepper to taste
  • 100 g smoked trout or smoked salmon
  • 4 tbsp crème fraîche
  • Zest of half a lemon
  • Freshly ground black pepper
  • Extra herbs or edible flowers for garnish

Instructions
 

  • Prep the potatoes
  • Boil the potatoes a day ahead, cool them down completely, and refrigerate overnight. This makes grating easier and helps the rösti stay crisp on the outside and tender inside.
  • Grate & season
  • Peel the cold potatoes and coarsely grate them. Gently mix with the chopped shallot, herbs, salt, and pepper. Don’t overmix – we want fluffy, not mashed!
  • Sizzle & crisp
  • Heat a non-stick or cast-iron pan over medium heat and melt a knob of butter. Press the potato mixture into the pan (you can do individual portions or one big rösti) and shape it into a round. Fry for 6–8 minutes per side until golden and crispy.
  • Pro tip: Place a plate over the pan to flip your rösti like a pro, then slide it back in to cook the other side.
  • Dress it up
  • Top the rösti with generous dollops of crème fraîche, smoked trout, a bit of lemon zest, and a crack of pepper. Garnish with herbs or edible flowers for full alpine flair.
  • Serve
  • Best enjoyed warm, with a side salad, a crisp white wine (like a Fendant or Riesling), and views of your favourite Swiss mountain – real or imagined.
